INGREDIENTS
Paneer cubes – 250 gms
Maida – ½ cup
Cornflour – 2 tbsp
Pepper pwdr – 1 ½ tsp
Baking soda – a generous pinch or ½ tsp eno pwdr to make the batter light
Oil to deep fry
Salt to taste
Olive oil – 1 tbsp [any oil will do ]
Finely minced garlic – 1 tbsp
Finely chopped red chilli – 2 or 3 or as per taste
Finely chopped spring onion – ¼ cup [white part ]
Capsicum strips – ¼ cup
Tomato ketchup /sauce – 1 tbsp
Soya sauce – 1 tsp
Chilli sauce – 1 tsp
Honey – 1 tbsp
Vinegar – ½ tsp
Finely chopped spring onion greens for garnish – 2 tbsp
PREPARATION
Make a batter of maida + cornflour + salt + 1 tsp pepper pwdr + baking pwdr /eno + water .
Cube the paneer
Make a mixture of chilli sauce + soya sauce + tomato ketchup + honey + 1 tbsp water + vinegar and keep aside .
Dry roast the sesame seeds .
***** Keep all the ingredients ready before u start .
METHOD
Add the paneer into the batter and mix well .
Heat oil in a deep pan .
Take each cube at a time , coat it well with the batter and slide it into the hot oil.
Fry in small batches , don’t overcrowd the pan .
Stir and fry till it is cooked on all sides , golden brown and crisp .
Remove on an absorbent paper and keep aside.
Heat 1 tbsp olive oil in another pan . [you can add little butter ]
Add the minced garlic and stir fry . [colour should not change ]
Add spring onion + chopped red chilli and fry .
Add capsicum and stir fry . [it should have the crunch ,don’t over cook ]
Add pepper pwdr + salt + sauce mixture + 1 tbsp water .
Mix well .
Add the batter fried paneer and mix well ,till it is coated from all sides .[u can toss it ]
Off the flame and garnish with spring onion greens + roasted sesame seeds .
Serve hot as a starter ,infact you can also stuff it in bread or chapatti and relish it as roll .
NOTES
Don’t use very soft paneer else it will break on frying .Go for store bought paneer cubes .
Instead of dipping in batter , you can use directly fried paneer cubes without batter .
Adjust sauces as per ur taste .
